Description
The last month of summer calls for a little recklessness. All you need is a tin of sardines or whatever tinned fish you keep in the cupboard, a scrap of paper towel, and a lighter. The paper towel wicks the oil and burns off slowly, warming the fish through and picking up a light char along the edges. It takes about a minute and it tastes far better than something this simple has any right to.
Do this outside or on a heatproof surface, keep it away from anything flammable, and don't walk away from it.
What you need:
* 1 tin of sardines in oil, or your tinned fish of choice
* 1 sheet of paper towel
* A lighter or long match
* Good bread and butter, for serving
* Lemon and flaky salt to finish
