I tried to go live for the first cook on my new Gozney Dome XL and the stream failed, so this is the next best thing: the whole cook, start to finish, barely edited. Not pizza. Hang out with me.
On the menu: spatchcock chicken with nothing but olive oil and salt, radicchio and endive in cast iron with olive oil, chili crisp, soy sauce and lemon, baby broccoli, and all of it served over a Greek yogurt and feta blend with garlic and lemon. Total cook time, 40 minutes.
Honest first impressions of the Dome XL (Gen 2) on natural gas, from someone who paid for it: the lowest it would hold was 500 to 520°F, the outside stays cool enough to lean on, and I burned my knuckles exactly as predicted. I get into why I went natural gas over propane, why the XL, the Field Company and Lodge pans I used, the new 10-foot table, and the red Wagyu project that's about to take over this channel.
Not sponsored. I bought the Dome. If you're thinking about one of these for outdoor cooking beyond pizza, this is what the first hour actually looks like.
