Description
Rice Paper Bacon, Egg and Cheese Bites
Crispy little burrito-style bites that taste like a breakfast sandwich you can eat with one hand. The rice paper crisps up in the oven and the inside stays soft and cheesy.
Makes 6 bites
Ingredients
* 6 rice paper sheets
* 5 eggs, scrambled for the filling
* 2 to 3 eggs, scrambled separately for dipping
* 100g shredded cheddar or smoked Gouda
* 6 strips bacon, cooked crispy and chopped
* 1 tbsp butter
* Everything bagel seasoning
Method
* Scramble the 5 eggs in butter just until barely set. Pull them early since they keep cooking in the oven. Set aside.
* Cook the bacon until crispy, chop it, and set aside.
* Shred the cheese and set aside.
* Scramble the 2 to 3 dipping eggs and add them to a shallow plate or pan.
* Dip a rice paper sheet into the egg one at a time, coating both sides. Let the excess run off.
* Lay it on a wooden cutting board. Add 1 tbsp scrambled eggs, 1 tbsp cheese, and a big pinch of bacon.
* Roll it tight like a burrito, fold in the edges, and curl it into a little bite ball.
* Place the bites on a parchment-lined sheet pan. Repeat for all 6.
* Sprinkle everything bagel seasoning over the top.
* Bake at 400F for 15 minutes until crispy and brown. Serve immediately.
