Two phone calls on the drive home: one with Legendary Akaushi about the red Wagyu that's finally ready to cross the border, one with my photographer Allan about 15 game birds and a living room that's about to become Christmas. This is what the week before a food shoot actually looks like.
The Wagyu paperwork is done (USDA, customs, The Butcher Shoppe's import licence), but after 60 days of dry aging the primals were too dark to photograph well, so two fresh animals were processed for the shoot. About 600 lb on one skid ships this week. Then the game bird plan: squab, guinea fowl, pheasant, duck, goose, Cornish hens and a deboned quail, ducks hung on a chain over a vat of potatoes, deep-fried quail with mac and cheese, a rebuilt Big Green Egg and a new Gozney Dome stone.
